is it always made with caramelized sugar? i thought i remember eating some with honey and i was ranting at the mother about how everything is substandard now and they use sugar instead of honey. wooops. my mistake i guess.
ps - i love pani cadju. its yummy with vanilla ice cream.
Well Pissu, to tell you the truth I didn't know that it was made out of caramelized sugar until I found the recipe,..however I didn't quite give that much of thought into it anyhow.
But in hindsight it's probably always made out of caramelized sugar because I don't know of anyway to get real honey to solidify like that, except for jaggery which really doesn't fit the picture. And you are right pani cadju and vanilla ice cream, even jaggery and vanilla ice cream sounds heavenly!

As for the ratio of Sugar to water in making caramel, it doesn't really matter. What happens is when you boil the sugar+water solution, the water evaporates leaving the molten sugar which is called caramel.
